In preparing for the 2024 Mollymook Congress, Barb Mansfield commented that it would be nice if we could collect the various recipes of the wonderful baked goods produced by Mollymook players.  Herein the start of that initiative

Louise Webb's Easy Date Loaf

Louise Webb's Easy Date Loaf

Sally gave me this recipe a few years ago. It is the easiest of recipes.

Ingredients

  • 1 cup of dates
  • 120g of butter
  • 1/2 cup of caster sugar
  • 1 tsp bi-carb soda
  • 1 cup boiling water
  • 1 1/2 cups of SR flour
  • 1 beaten egg
  • Vanilla
  • 1/2 tsp Nutmeg
  • 1/2 tsp Cinnamon

Directions

  • Put dates, butter, sugar, bi-carb and water in a saucepan and gently cook whilst stirring for a few minutes.  
  • Allow to cool.
  • Sift flour, nutmeg and cinnamon, mix in egg, vanilla and date mixture.  
  • Place in a greased and lined loaf tin and cook for 45 minutes in a moderate oven.

Brigid McTiernan's Cranberry Slice

Ingredients

  • 125g butter
  • 1 cup brown sugar
  • 1 egg lightly beaten
  • 1 cup dried cranberries
  • 1 cup self-raising flour sifted

Directions

  • Preheat oven to 160° fan forced.
  • Melt the butter in a medium saucepan,
  • Add the brown sugar and stir until dissolved, remove from the heat and allow to cool.
  • In the cooled saucepan, add the egg, cranberries and flour, stir well.
  • Press the mixture into the baking tray and bake for 20 mins.
  • Remove from the oven (the slice should have developed a caramel crust but move slightly when pressed lightly).
  • Mark the slice into 4cm squares with a knife.
  • Allow to cool completely and then cut into squares.

Notes

Bake in a baking tray about 27cm x 16 cm.  Either lightly grease the tray or line with a silicon liner insert.

Gloria Norman's Rock Cakes

Ingredients

  • 2 cups flour SR
  • ½ cup sugar
  • Heaped tablespoon Marg.
  • 1 egg + small quantity of milk
  • ½ cup mixed fruit + small quantity of mixed peel and diced apricots

Directions

  1. Mix flour, sugar and butter together until it looks like breadcrumbs.
  2. Add all fruit then add milk + egg slowly, you can add more milk if necessary.
  3. Spoon a tablespoon of mixture on a greased tray not too close and sprinkle the top with sugar.
  4. Cook in a hot oven for about 15-20 minutes.
KT's Spicy Cheese Biscuits

KT's Spicy Cheese Biscuits

Ingredients

  • (Makes about  18)
  • 114g butter
  • 150g plain flour
  • 135g grated full cheddar
  • 2 tsp baking powder
  • ½ tsp salt
  • ¼ tsp cayenne pepper
  •  

Directions

  1. Heat oven to 180C
  2. Line tray with baking paper.
  3. Mix flour, baking powder, cheese, salt and cayenne pepper in a bowl.
  4. Melt the butter then add to the ingredients and mix well.
  5. Roll a good teaspoon into a ball and place on baking tray and flatten with a fork until all are done.
  6. Bake for 20 minutes
  7. Cool on the tray and then move the biscuits to a cooling tray to cool completely

KT's Tips

  • Biscuits can be stored in airtight container for 2 weeks- not likely!
  • If it is cold, the butter in the mix may start to solidify, stand your mixing bowl in another bowl of warm water.
  • Also don’t make all of the balls before flattening as they may harden.
